This is raw chocolate made with Japanese apples, Hikone apples, which are very rare these days.
Hikone apples are also called ``phantom apples,'' as they are only grown by enthusiasts and never reach the market.
Japanese apples are usually small and have a strong acidity, so they are not suitable for eating raw.
By drying it, the subtle sourness and gentle sweetness are concentrated.
